Make them bake! Homemade Muffin Recipe for Sahur

Ramadan is a holy month where Muslims fast for one month before celebrating the Eidul Fitri. In addition to being a month of sincere intentions and spiritual connection with God, Ramadan is a good opportunity to rekindle relationships with loved ones, friends, and relatives who live far away.

In Ramadan, our meals are altered as we eat only two main meals, Iftar and Sahur. For Sahur, it is important to eat a proper meal, full of nutritions and hydration as it helps make your fasting easier and tolerable.

However, it can be quite challenging to decide what to eat when you first get up in the morning. In today’s blog we are going to share an easy Sahur recipe that you can try at home.

Ingredients:

  • 3 ripe bananas (1 cup mashed)
  • 2 tablespoons melted Coconut Oil
  • 2 whole eggs
  • 1/4 cup brown sugar
  • 1 cup almond flour
  • 1/2 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 teaspoon salt
  • 1 ½ tsp. baking soda
  • ½ teaspoon baking powder
  • Streusel Topping
  • ¼ cup oats
  • 1 tablespoon brown sugar
  • 2 tablespoons slivered almonds
  • 1 tablespoon coconut oil, melted

Instructions:

  1. Preheat the oven to 350 and grease the muffin tins.
  2. Mash the banana in a medium sized bowl.
  3. Beat in oil, egg, and brown sugar.
  4. In a separate bowl, stir together the dry ingredients (oats, almond flour, cinnamon, coconut flour, baking soda, baking powder and salt).
  5. Combine the dry ingredients into the wet ingredients bowl and stir well. Do not over mix.

Streusel Topping:

  1. In a small bowl, mix together ¼ cup oats, turbinado sugar, slivered almonds and melted coconut oil.
  2. Sprinkle streusel topping on muffins.
  3. Spoon into muffin tins.
  4. Bake for 15-20 minutes
  5. Enjoy 🙂
